I got an offer from both the companies, manager role. Flipkart’s offer: fixed (x) + variable pay + stock Deloitte’s offer: fixed (x+1) + variable + 1.5L joining bonus Variable pay % is the same. Flipkart is offering a sizeable huge chunk in stock. What should I consider apart from compensation? Annual hikes, WLB, work culture, etc? (Note that It’s a non IT role)

If you're fresher and you don't have other options then only you join here. There is no job security for you. They'll simply make a call to you and say don't come from tomorrow. Money they'll not give you until you fight.
