As a Chef de Partie (CDP) at Scylla Luxury Resort Spa, you will play a key role in the culinary team, responsible for overseeing a specific section of the kitchen and assisting the Sous Chef and Executive Chef in the preparation and execution of high-quality dishes. With your culinary expertise and leadership skills, you will contribute to the creation of memorable dining experiences for our guests while maintaining the resorts culinary standards.
Responsibilities:
1. Food Preparation and Cooking:
- Prepare and cook a variety of dishes within your assigned section of the kitchen, ensuring adherence to recipes and presentation standards.
- Execute cooking techniques with precision and consistency to achieve optimal flavor, texture, and appearance of dishes.
- Monitor food cooking times and temperatures to ensure food safety and quality.
2. Section Management:
- Oversee the operations of your designated kitchen section, including organizing workflow, assigning tasks to Commis and Demi Chefs, and ensuring timely preparation of food orders.
- Maintain cleanliness and organization in your section, including workstations, equipment, and storage areas.
3. Quality Control:
- Ensure high standards of food quality, taste, and presentation in all dishes prepared within your section.
- Conduct regular quality checks on ingredients and finished dishes to uphold the resorts culinary standards.
- Implement portion control measures to minimize food wastage and ensure cost efficiency.
4. Menu Support:
- Assist the Sous Chef and Executive Chef in menu planning and development, contributing ideas for new dishes, ingredients, and techniques.
- Collaborate with the culinary team to execute menu changes, special promotions, and themed events.
5. Training and Development:
- Mentor and train junior kitchen staff, including Commis and Demi Chefs, in culinary techniques, food safety practices, and kitchen procedures.
- Provide guidance and feedback to support the professional growth and development of kitchen team members.
6. Health and Safety Compliance:
- Ensure compliance with health and safety regulations in the kitchen, including proper food handling, storage, and sanitation practices.
- Conduct regular inspections and audits to maintain a safe and hygienic working environment.
7. Team Collaboration:
- Work closely with other members of the culinary team to coordinate kitchen operations and ensure smooth service delivery.
- Communicate effectively with chefs and kitchen staff to coordinate tasks, prioritize orders, and maintain efficient workflow.
Qualifications:
- Culinary degree or relevant certification from a recognized culinary school.
- Previous experience as a Chef de Partie or similar role in a luxury hotel or fine dining restaurant.
- Strong culinary skills with proficiency in various cooking techniques and cuisines.
- Leadership abilities with the ability to manage a kitchen section and supervise junior staff.
- Knowledge of food safety regulations and kitchen hygiene standards.
- Excellent communication and teamwork skills.
