Position Title - Brand Chef – New Initiative
Location – Bangalore
Position reporting to – Culinary Lead
Job Purpose :
This Position requires -
Support and drive innovation in existing food offerings.
Assist in menu planning and tasting.
Ability to innovate in menu, dishes, recipes, presentation and showcase the same.
Sound & advance knowledge of MS Skills – Excel, PowerPoint etc.
Key Responsibilities :
Work closely with the site’s manager to execute the trainings & trials and facilitate communication between the front and back of the house.
Working closely with marketing and segment chefs.
Provide guidance to junior kitchen staff members, including, but not limited, to bulk cooking, food preparation, and buffet set up.
Team handling skills
Understand and adhere to Standard operating procedure (SOP) for hygiene, portion control, preparation, storage, PPE, discarding methods
Collaborating with the event services manager and staffing manager to align on site BOH operations with the overarching departmental goals and training.
Functional Responsibilities -
Responsible for food quality, presentation, timing, and ensuring the top quality of freshness and flavor for client dinners, meetings, and catered events of all sizes and types across pan India locations.
Duties include, but not limited to - event food management, supervision of all BOH staff, time management, food execution, and creative thinking during an event.
Event Chefs are the managers in the BOH (Back of House). You are the management representative for Catering by Design when other management is not present.
Controls and confirms time and completion of Projects.
Ensure that the served food meets all necessary standards and regulations such as sanitary and safety guidelines.
Ensure the serving of quality culinary dishes and on schedule.
Ensure that no problem arises during serving; if any, it should be rectified quickly.
Manage the rest of the chefs in the chef’s chain of command.
Providing accurate feedback regarding the food quality and execution of the event while filling the event evaluation.
Functional Competencies –
Clear understanding on documentation involved in creating brands, costing, brand ppt etc.
Team player, self-motivated, leadership skills, creative, influencing skills and innovative.
Excellent Organizational & planning skills.
Keep up with trends and best practices.
Should demonstrate time management, learning attitude, creative and ability to work under pressure.
Ability to accurately track inventories & create reports.
Qualifications –
Degree from Hotel Management institute.
Preferred Multicuisine holding sous chef.
Experience –
Minimum of 4 years’ experience as sous chef.
Applicable culinary experience in a similar volume food service establishment.
Communication and leadership skills.
Advance Knowledge of MS Office – Excel , PowerPoint etc.
