Job Description

Position: Head Chef
Location: The Fern Hotel Goregaon , Mumbai
Restaurant:
Beiruna - A 100-seater high-end rooftop Arabic lounge with an open live kitchen.
Job Overview:
Beiruna is looking for a dynamic and guest-focused Expatriate Lebanese Head Chef to lead its rooftop lounge, specializing in authentic Lebanese, Moroccan, Turkish, and Arabic cuisine. The ideal candidate will not only bring exceptional culinary expertise but also possess the charisma to engage with guests, promote the restaurant, and create a buzz in the market.

Key Responsibilities:

Culinary Leadership
  1. Oversee all kitchen activities for the rooftop restaurant, ensuring seamless operations and high-quality food output.
  2. Ensure the consistent taste, flavour, and presentation of all dishes, adhering to the high standards set by the Head Chef and Consultant Chef Sudhir Pai.
  3. Supervise all
    mise en place
    , working closely with the main kitchen, butchery, and larder teams to ensure readiness for service.
  4. Innovate and contribute to the menu to keep offerings fresh, exciting, and market-relevant.
Guest Engagement & Marketing
  1. Be the face of Beiruna s culinary experience engage with guests personally, suggest dishes, and seek feedback to enhance their dining experience.
  2. Represent the restaurant in marketing efforts by creating engaging social media content, including reels, behind-the-scenes footage, and live cooking demonstrations.
  3. Build relationships with loyal customers, influencers, and local food critics to establish a strong market presence.
Team Collaboration
  1. Lead and mentor the kitchen team, ensuring smooth coordination with Indian cooks and chefs.
  2. Foster a positive and collaborative environment in the kitchen while maintaining professionalism and productivity.
  3. Work closely with the Head Chef and Consultant Chef to set and maintain high culinary and presentation standards.
Operational Excellence
  1. Oversee inventory management, including ordering fresh, high-quality ingredients while adhering to budgetary constraints.
  2. Ensure all food safety and hygiene regulations are met, maintaining compliance with Dubai s standards.
  3. Prepare detailed operational reports and communicate updates with the Head Chef and management.


Schedule & Work Environment
  1. Adapt to flexible hours, with a focus on late evenings up to 2 AM, catering to the lounge s high-end dining and nightlife ambiance.
  2. Ensure readiness for peak dining hours by maintaining smooth coordination with other sections of the kitchen.

  1. Proven experience as a Sous Chef or Head Chef in reputable Arabic restaurants in the Middle East, particularly in Dubai.
  2. Expertise in Lebanese, Moroccan, Turkish, and Arabic cuisines, with a flair for modern presentation techniques.
  3. Strong interpersonal and communication skills in English and Arabic.
  4. A guest-oriented mindset with a passion for creating memorable dining experiences.
  5. A charismatic personality capable of representing the restaurant in public forums, social media, and marketing events.
  6. Demonstrated ability to lead a diverse kitchen team and manage operations efficiently.
  7. Creative problem-solving skills with attention to detail in both taste and presentation.
