To provide efficient and quality FB service through strategy adherence and effective execution that enhances revenues and guest satisfaction within the framework of the FB brand standards and corporate guidelines.
Job DescriptionDevelop and review strategy budgets in keeping with competitor analysis and guest feedback. Share allocated budget and performance targets with team and create action plan for the current year. Conduct periodic competition reviews and create unique action plans to counter competition.
Focus on reducing cost of operations through waste management, optimal utilization of resources and reduction in breakage of cutlery, crockery and glassware.
Review menu pricing, portion size, layout of the restaurants, different equipment used and provide inputs on the same so as to ensure costs are curtailed and sale is maximized leading to profits.
Manage relationship with guests, encourage repeat clientele by focusing on quality of food and services offered, coming up with promotional events and effective resolution of issues raised.
Encourage innovation and focus on processes to improve efficiency and the level of services rendered.
Conduct PR activities by keeping media informed on promotions, menu changes and other innovations in order to build a strong image of the hotel s food and beverage offerings in the market.
Coordinate with the banquets and sales team to develop banquet and conference packages and determine competitive pricing based on market analysis; oversee banquet proceedings right from finalization of contract till actualization.
Review and prepare performance evaluations of all his outlet heads as well as reviewing all evaluations submitted by his outlet heads for FB associates as per company s instructions.
Perform necessary HR functions such as setting of KRAs, conducting appraisals and job chats, taking interviews of prospective candidates and making recommendations for movements/transfers when required.
Conduct internal audits periodically and keep in consonance with audits like TPAM, LQA, HACCP or any other as deemed by the organization. Take corrective actions based on results/findings and share the road ahead with the team.
In addition to the above mentioned duties and job functions, any other assignment given by the management within the scope of job.

Qualifications and Experience
Diploma/Degree in hotel management
8-9 years in food and beverage service, minimum of 5 years of experience in various FB outlets Coffee shop, Banquets, Specialty restaurant, Bar and In-room dining
In-depth knowledge of various cuisines, wine, spirits, CCG, tableware, compliance with excise, licenses for liquor and events, basic understanding of facility management along with supply chain management and market trend analysis.
Customer orientation, Decision making, People Management, Analytical ability, Communication skills.
