A hotel steward plays a critical role in maintaining the cleanliness and organization of the kitchen, dining, and service areas within a hotel. They typically work in the food and beverage (F&B) department and ensure smooth kitchen operations. Their work supports chefs, servers, and other hotel staff to maintain high service standards.

Key Roles and Responsibilities:

  1. Kitchen and Equipment Cleaning
    • Clean and sanitize dishes, utensils, pots, pans, and kitchen equipment.
    • Maintain cleanliness of kitchen stations, floors, counters, and surfaces.
    • Operate dishwashing machines and handle manual dishwashing as needed.
  2. Inventory and Supplies Management
    • Assist in receiving and storing food supplies and equipment.
    • Maintain an organized stockroom and storage area for kitchen items.
    • Monitor inventory levels and report shortages of cleaning materials, tools, and utensils.
  3. Garbage and Waste Disposal
    • Collect and dispose of kitchen waste properly.
    • Ensure waste bins are emptied, cleaned, and sanitized regularly.
    • Follow waste segregation practices as per health and safety regulations.
  4. Maintenance of Kitchen Tools and Equipment
    • Ensure all kitchen tools and equipment are cleaned and maintained in good working condition.
    • Report any broken or malfunctioning equipment to the kitchen supervisor.
  5. Support Food Preparation
    • Assist chefs with basic food preparation tasks like peeling, chopping, or fetching ingredients.
    • Help set up cooking stations by ensuring availability of clean tools and utensils.
  6. Hygiene and Safety Standards
    • Follow hygiene standards and safety protocols in food handling and kitchen maintenance.
    • Ensure compliance with hotel sanitation guidelines and local health codes.
    • Maintain personal cleanliness and hygiene while on duty.
  7. Coordination with Kitchen and Service Staff
    • Work closely with chefs, servers, and other staff to ensure smooth kitchen operations.
    • Deliver clean utensils and dishes to serving stations promptly.
    • Support servers during busy periods by handling kitchen-to-table transfers.
