Job Summary:
We are looking for n skilled Sous Chef with expertise in Continental / Italian cuisines to join our team. As the Sous Chef, you will be responsible for assisting the Operation team in overseeing kitchen operations, ensuring high standards of food quality, and managing kitchen staff. You will play a crucial role in creating memorable dining experiences through innovative and consistent menu items and exceptional presentation.

Key Responsibilities:

  • Kitchen Management:
    • Guide the Outlet Chef in daily kitchen operations and ensure smooth functioning during service.
    • Oversee food preparation and cooking processes to guarantee high-quality standards are met.
    • Maintain kitchen inventory and ensure proper stock levels for ingredients and supplies.
  • Menu Development:
    • Collaborate with the Consultant Chef and the VP Operation to design, develop, and refine dishes.
    • Create new recipes that align with seasonal ingredients and culinary trends.
    • Ensure that all dishes are consistent in quality, taste, and presentation.
  • Team Leadership:
    • Lead, train, and supervise kitchen staff, including junior chefs and commis.
    • Provide guidance on cooking techniques, plating, and portion control.
    • Foster a positive and collaborative working environment.
  • Quality Control & Hygiene:
    • Monitor food safety, sanitation standards, and hygiene practices in the kitchen.
    • Ensure compliance with health and safety regulations.
    • Conduct regular inspections of food storage, preparation, and presentation areas.
  • Cost Control & Budgeting:
    • Assist in managing food costs, reducing wastage, and optimizing kitchen budgets.
    • Implement portion control and cost-effective practices without compromising quality.
  • Culinary Expertise:
    • Stay up to date with the latest trends and techniques inContinental cuisine.
    • Lead by example, maintaining high culinary standards during service and prep.
    • Handle special dietary requests and menu adjustments as needed.
  • Guest Interaction:
    • Occasionally engage with guests to gather feedback on food quality and presentation.
    • Collaborate with the service team to ensure a seamless dining experience.

Qualifications & Skills:

  • Proven experience as a Sous Chef or Senior Chef de Partie specializing in Italian cuisine is MUST.
  • Culinary degree or equivalent certification.
  • Strong knowledge of kitchen management and production techniques.
  • Ability to manage a team and work in a fast-paced environment.
  • Exceptional creativity in menu development and presentation.
  • Understanding of cost management and food safety protocols.
  • Strong leadership and communication skills.
