Location: Mahalaxmi,Mumbai

Job Summary: - We are seeking an experienced and skilled Butcher to join our restaurant team. As a crucial part of our kitchen staff, the Butcher will be responsible for expertly preparing, cutting, and portioning a variety of meats to the restaurants specifications. You will ensure that the meat is handled and stored in compliance with safety standards and that cuts are prepared for different dishes in an efficient and timely manner. The ideal candidate is detail-oriented, knowledgeable about different cuts of meat, and has a strong understanding of food safety and sanitation standards. Your work will contribute directly to maintaining the high quality of our menu and enhancing the dining experience of our guests.

Job Description: -

• Perform precise cuts of meat, poultry, and seafood according to menu specifications.
• Ensure proper preparation, storage and preservation of cold cuts to maintain freshness.
• Fabricate and portion proteins to ensure minimal waste and maximum quality.
• Prepare and handle a variety of cold cuts, including slicing and curing meats.
• Inspect and receive meat deliveries to ensure they meet quality and safety standards.
• Maintain inventory of meats and cold cuts, minimizing waste and ensuring stock rotation (FIFO).
• Ensure all butchery processes comply with hygiene, food safety, and restaurant standards.
• Inspect meats for quality and freshness, discarding items that do not meet restaurant requirements.
• Work closely with the Head Chef and kitchen team to prepare proteins according to the menu.
• Provide insights into meat preparation for new dishes and menu development.
• Safely operate and maintain all butchery equipment (e.g., knives, slicers, grinders).
• Ensure the cleanliness and organization of the butchery station.
• Prepare proteins with attention to detail, ensuring they are presented in line with fine dining aesthetics.
• Assist in training kitchen staff on basic butchery techniques if required.

Job Specification: -

• Proficiency in advanced butchery techniques, including deboning, portioning, and curing.
• Expertise in cold cuts and charcuterie preparation.
• Strong knife skills and knowledge of various cuts and cooking methods.
• Having a Coursework in meat handling would be a plus.
