Machine learning is a model training where we generally train any software system to do any specific task or set of tasks in an intelligent manner. We can say that in ML we have to provide a lot of data to train the model so It can learn from that that data and perform or execute any task in lesser time than any human individual. 
Google assistant is an AI model which is also a part of ML which has NLP (Natural Language Processing) which recognises the input as user voice and then decode it then with the help of its techniques and algorithms , it processes the requests and fullfill the user requirements.
